So, I am very aware that I started this blog only to go AWOL for a while. Though I do have a valid reason for being MIA (okay, no more military acronyms), I still feel the need to make it up to you, and I will, but not now. There is something I will do now, however, and that is post two recipes for spring/summer/fall/winter(?) BBQ-ing. :)

The first is for marinated grilled tofu.

This recipe is for two skewers (8 pieces each); however, If you do what I did, and drop half of one skewer on the ground, it’s only for 1 1/2.

Ingredients:

  • 1/2 block firm tofu
  • Tamari (I use light/low sodium)
  • Sriracha Sauce

Steps:

  1. Cut tofu in half and pat dry
  2. Put tofu, tamari, and sriracha in zip-lock bag (amount of sauce depends on how spicy you want your tofu to be, it doesn’t matter as long as all the tofu is covered)
  3. Put in fridge and leave to marinate for at least 30 minutes
  4. (Now you have time to prep your veggies.)
  5. Take tofu out of fridge and impale onto skewers
  6. Place skewers on BBQ and cook until done (it depends on your BBQ how long they will take to cook, for me it was a little under 10 minutes)

The second recipe is for Balsamic BBQ Veggies. If there’s one thing I like as much, or even more than, cooking and baking, it’s alliteration.

Ingredients:

  • 1 small potato
  • 1 small onion
  • Small handful broccoli
  • Small handful carrot sticks
  • (However, you can use whatever veggies you like.)
  • 2 tsp Olive oil
  • 2 tsp balsamic vinegar

Steps:

  1. Mix EVOO (as Rachel Ray calls it, aka Olive Oil) and vinegar
  2. Put veggies into BBQ-safe cooking vessel
  3. Pour oil & vinegar mixture over veggies and mix
  4. Cover cooking vessel
  5. Place on top rack of BBQ (if you have one) and cook till tender (for me this was about an hour)

Mmmm…

Plate it up and enjoy! :)

In other news this meal was the only part of my day that went right. I’m sick, first of all. Second, I tried to make whole wheat bread in the bread maker today, only it turned out pretty bad (which reminds me, I have a pretty good bread maker recipe to share). Finally third, I just purchased the non-trial version of the watermark software and supposedly activated it, but it still has the trial version watermark in the corner (never mind, this was my mistake). Oh, and did I mention I dropped 1/2 a skewer of tofu on the ground. O, woe is me.
